Oreo Malteser Fridge Cakes

This no-bake dessert is every chocolate lovers dream! Layers of crushed oreos, digestives, maltesers and rich chocolate. 


Chocolate fridge cake is one of my favorite candies to make. It’s made quick and requires few ingredients. One batch of fridge cakes can fill several bags or boxes if you’re gifting it. Not only this, but I do think these look pretty special. Especially when you look at the sides and see chunks of maltesers. Let’s also not forget how damn tasty fridge cakes are. It’s chocolate and doesn't require any baking at all - what else do you need! 


Oreo Malteser Fridge Cakes

The bulk of the cake is made from dark chocolate, butter and golden syrup. For those who are not a fan of dark chocolate, don't worry, the golden syrup adds a lot of sweetness and the dark chocolate gives that really rich colour.  For the best tasting fridge cakes, use quality chocolate. With so little ingredients, it’s important to use pure chocolate. I typically use Green and Blacks but any good quality chocolate will work. 
For this particular batch I was feeling the chocolate and loaded the base mixture with maltesers, oreos and digestives but feel free to go wild and switch it up! Some ideas, particularly in the summer could be to throw in some lemon or orange zest, dried fruits, rainbow sprinkles or even popping candy for a secret surprise. For those who are more sophisticated (not me!) you can even add in a dash of alcohol such as hazelnut liqueur - the possibilities are endless. 
Oreo Malteser Fridge Cakes

Prep Time: 20 minutes
Chill Time: 2 hours
Serves: 12 bars


Ingredients

350g dark chocolate
150g butter
4 tbsp golden syrup
200g crushed digestives
100g maltesers


150g crushed oreos
sprinkles for decoration

Method

Break or chop the chocolate into small chunks and place in a non-stick saucepan with the golden syrup and butter. Melt the ingredients gently over a low-medium heat, stirring occasionally until smooth and silky. (Alternatively melt in the microwave in 10-20 second bursts, stirring frequently).


Using a spoon, stir in digestives, oreos and most of the maltesers. Press the mixture into a 25 x 25 cm tin, smooth over the top with the back of a spoon. Sprinkle the remaining maltesers and sprinkles (I used white stars) on top.


Chill in the fridge for 2 hour until set, cut into bars. Store in an airtight container in the fridge for up to 2 weeks.
