Sparkling Blueberry Pomegranate Lemonade

Hey Guys! I know its been a while since my last post but I've been completely swamped with revision and exams and just haven't had the time to really spend much time in the kitchen! Its been a lot of takeaway in the last couple of weeks! 

Thankfully, my exams are just about over and London has been experiencing some sweltering heat over the last couple of weeks and my fan just never seems to be able to cool me off! I started making some fun and quirky drinks to cool off and I had the idea to start a summer drinks series and show you all a couple of the drinks I made up. They're all simple to make and are packed full of fruits which have lots of antioxidants which is great for the skin and perfect for summer! 

Lemonade I
The plan is to post one new drinks recipe each week throughout summer. Im hoping to be able to experiment with textures, flavours and presentation of the drinks! This first recipe is one of my favourites - pomegranate seeds are one of my all time favourite snacks so I really enjoyed this drink. It is fairly sweet but it does have a tang from the lemonade - ideal for a hot summer days! I really enjoy the fact that the lemonade is carbonated or 'fizzy' as I think it makes the drink so much more enjoyable and refreshing especially when its 30 degrees outside. 

I experimented with the presentation and I ended up using my adorable mason jar glass from Primark! I think they look really homey and cute and I love the quote on it. I'm definitely going to pick some more of these up so that I can use them for when guests come over. I added a little bit of ribbon around the rim as well just to make it look extra special!

Lemonade II

Prep Time: 5 minutes
Serves: 6 glasses


20-30 fresh blueberries

6 lemon slices
400ml blueberry pomegranate juice (if you cant find  blueberry pomegranate juice, you can just add 200ml of each juice separately or just 400ml of one! It doesn't really matter it will still taste good!)
800ml sparkling lemonade
crushed ice 

Lemonade III
For the Sparkling Blueberry Pomegranate Lemonade

In a jug, mix blueberry pomegranate juice with the sparkling lemonade and stir until combined. Pour drink evenly into 6 glasses.

Sprinkle 4 to 5 whole blueberries on top for garnish and decorate. 

Place lemon slices on the rim of the glass for a special touch.

Add crushed ice as needed and add straws to each glass. 

Serve ice cold and enjoy!
