S'mores Bars

Hey Guys! So today’s recipe was kind of a first time experiment for me! I’ve never been too much of a marshmallow person but lately I’ve been having a craving for them but I didn’t really want to just eat them plain. The first thing that comes to mind when I think of marshmallows is s’mores! Gooey marshmallows with chocolate sandwiched between crackers!

I started to research some recipes and came across these s’mores bars by pixilated crumb and I knew it just had to try out my own take on them! I was happy with how they came out - I was worried that the marshmallow flavour might have been a tad too strong but that wasn’t the case at all! They had a really good blend of flavours! I particularly enjoyed the brown sugar digestive base!

So if you’re a marshmallow or a s’mores fan give these a go for a new take on a classic! Hope you guys enjoy this one!

Prep Time: 20 minutes
Cooking Time: 15 minutes
Chilling Time: 3 hours
Serves: 20 bars


20 digestive biscuits (crushed into crumbs)
1 tbsp dark brown sugar
150g unsalted butter (melted)
200g milk chocolate
200g oz dark chocolate
1 cup heavy cream
80g mini marshmallows
85g unsalted pecans (chopped into pieces)

For the Bars:

Preheat oven to 300F/150C degrees and line an approx 9×13-inch pan with baking paper.
In a bowl, stir together the digestive biscuit crumbs and brown sugar until combined. Stir in the melted butter.

Make sure mixture is well-combined, then pat mixture into the baking pan until an even layer is formed.

Bake the crust until golden brown, about 15 minutes.

Break chocolate into even pieces into a heatproof bowl.

In a pan, bring the cream just to a boil. Pour it over the chocolate mixture and let stand for 2 around minutes. Whisk the cream into the chocolate until smooth. Fold in the marshmallows and chopped pecans.

Pour on top of the digestive crust and use a spatula to spread it evenly. Sprinkle the top with the chopped pecans and marshmallows.

Refrigerate for at least 3 hours or until set. Cut into squares and serve.
