Chocolate Chip Blondie Bars

Hey guys! I’m meeting some of my best friends from Hong Kong today and since I’ve started up the blog they’ve all asked me to bake for them! I was actually quite nervous to do so, I’ve known these guys for years and years before I started having an interesting baking so I wanted to bake something they’d all enjoy!

I decided to keep it simple and go for chocolate chip blondies – a favourite all around! It is difficult to find someone who doesn’t enjoy the chewy gooey chocolately deliciousness! I mean seriously, these blondies have that perfect chewy edges with a gooey middle and the whole thing is loaded with chocolate chips! Cant really go wrong with these….

This is one of those easy peasy one bowl recipes where you just chuck everything in and give it all a good mix before slapping it into a pan. So if you’re in a hurry or just need a quick dessert this one is sure to be a favourite all around.

Prep Time: 10 minutes
Cooking Time: 30 minutes
Serves: 12 blondies

Ingredients:

225g unsalted butter (room temperature)
150g light brown sugar
150g granulated sugar
2 tsp vanilla bean paste or vanilla extract
2 large eggs (room temperature)
400g plain flour
1 tsp baking soda
1 tsp salt
150g semi sweet chocolate chips
1 packet m&m’s

For the Blondies:

Preheat the oven to 350F/180C degrees. Line an approximately 8 by 12 inch baking pan with baking paper

In a large bowl, cream butter, brown sugar, and granulated sugar with an electric mixer on high speed for 3 minutes, until the mixture is light and fluffy.

Turn the mixer on low and add the vanilla, then the eggs, one at a time, and mix well, scraping down the bowl.

In a small bowl, sift together the flour, baking soda and salt and with the mixer still on low, slowly add flour mixture to the butter mixture. Fold the chocolate chips in with a spatula.


Spread the batter into the prepared pan and smooth the top. Sprinkle additional chocolate chips and m&m's on top. 

Bake for 30 minutes exactly. Don't overbake! A toothpick may not come out clean. Cool completely in the pan and cut into bars.
