Chocolate Chip Cookie Bars

Hi Guys! So today im going to show you how to make these chocolate chip cookie bars. These are made using a basic cookie dough however to make them extra special and snazzy looking I’ve decorated them with melted chocolate and put them on lolly sticks covered in pretty tape to make them look extra special! However, there are so many ways to be creative with this recipe, especially with the decorations! I stuck with just chocolate but this can be substituted with crushed nuts, sprinkles and dried fruits.

Cookies are one of my all time favourite desserts, especially gooey chocolately cookies, but I found that they were often not the most fun or pretty dessert to look at so I decided to try these out and this was the outcome. Hope you all enjoy the recipe!

*Note: the tapes used to decorate the lolly sticks can be purchased from target in the US and similar alternatives from Paperchase in the UK.

Lolly Sticks:

Prep Time: 2 hours
Cooking Time: 8 – 10 minutes
Serves: 25 cookies


  • 2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (room temperature)
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 1 cup chocolate chips (milk, dark or white)
  • 200g Milk or Dark Chocolate
  • 100g White Chocolate
For the Cookies:

In a large bowl, use an electric mixer and beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and granulated sugar and mix on medium speed until fluffy and light in color. Mix in egg and vanilla extract.

In a separate bowl, mix flour, cornstarch, baking soda and salt. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick. Add the chocolate chips and mix in by hand. Cover dough tightly with glad wrap and chill in the fridge for at least 1 hour (2+ hours preferred for thicker cookies). Chilling is important for this cookie dough.
After thee cookie dough has chilled, remove from the fridge and allow the dough to sit at room temperature for 10 minutes. Preheat oven to 350F of 175C degrees. Line two baking trays with grease proof baking paper.
Once chilled, the cookie dough will be slightly crumbly, but will come together eventually. Roll dough out between two pieces of baking paper and use square shaped cookie cutter to cut out cookies (cut a smaller, thicker cookie as when baking it will spread and thin out slightly). Gently place the lolly sticks into the side of the cookies, about one inch in. Make sure to wrap foil around the exposed wooden lolly sticks so that they do not burn.

Bake cookies for 8-10 minutes, until barely golden brown around the edges. They will look be quite soft when first removed from the oven. Allow them to cool for 5 minutes on the baking tray.

For the Decorations:

Once the cookies are cooled, melt the milk chocolate over a double boiler until smooth. Using a butter knife, smear chocolate on half of the cookie or until you are happy with the design.

In a separate bowl, melt the white chocolate until smooth. Use a teaspoon to drizzle white chocolate over the milk chocolate to get decorative effect. Finally use tape or any decorations to decorate the wooden lolly sticks.
